Rainbow Stir Fry

Bright, Colourful and Healthy

Well I been making stir fry noodles which a range of veg and I thought the dish always looks colourful like the rainbow so I thought lets but a combination of veg to really make it like the rainbow. This dish as many of mine are very adaptable and all the veg used can be chopped and changed to your own likely but I do say pick wisely and keep it colourful. This recipe does reflect my personality as well as I am spicy and colourful and have a bit of a bite to my approach to life. Variations in colourful food and cooking also have health benefits as all veg provide many nutrients and vitamins.


Suggested changes to the veg is use traffic light peppers, sugar snap peas, green beans, mushrooms, broccoli florets, the list is endless. Sometimes I make a all green veg stir fry, this recipe works well on a bed of sticky rice as well.

Rainbow Stir Fry: Text

Ingredients:


1 red pepper

2 carrots

1 pack (approx. 130g) baby corn

1 pack (approx. 160g) tender stem broccoli

2 or 3 red onion

¼ red cabbage

2 tbsp chilli sauce

2 tbsp soy sauce

2 tbsp sweet chilli sauce

2 tbsp oil

1 tsp chilli powder

Salt to taste

1 tsp garlic paste (or a couple of fresh cloves, grated)

1inch piece of fresh ginger grated

1 pack of eggless noodles


Method:

1) Chop all the veg finely making sure they are all similar size so they cook quickly, I prefer all julienne, cabbage shredded and the baby corn and broccoli left whole of us halved if too big.

2) In a large pan on a medium slow heat, add the oil and begin with the veg that takes a litter longer to cook. Add in the salt to help it cook along with the ginger and garlic paste. Once that has had a few minutes add in the onion, pepper cabbage, mix in the chilli powder and place the lid on top to let them steam in their own juices for a while.

3) Meanwhile have the noodles in boiling water and while that boils away, check to see if he carrots have cooked through.

4) Once carrots are done add in the broccoli and baby corn. Add this point stir in all the sauce and give it 2 to 3 minutes depending on how crunchy you like your veg and then turn off the heat.

5) Strain the noodles and stir the veg mix all together and its ready.
